Nanoencapsulation of Red Bell Pepper Carotenoids: Comparison of Encapsulating Agents in an Emulsion Based System

Red bell pepper extract rich in carotenoids was (RBPE) encapsulated with four different encapsulating agents: calcium caseinate (ECC), bovine gelatin (EBG), whey proteins isolate (EWPI), and concentrate (EWPC), aiming to investigate the most effective material coat enable water dispersibility of pigments. Formulations were obtained by oil (O/W) emulsification technique, followed freeze-drying. Samples analyzed encapsulation efficiency, high-performance liquid chromatography (HPLC), Fourier transform infrared spectroscopy (FTIR), dynamic light scattering (DLS), atomic force microscopy (AFM), thermogravimetric analysis (TGA), dispersion stability, CIELab. Nanoformulations showed a carotenoid efficiency 54.0% 57.6% 56.6 % 64.0 (EBG). Recovered profiles from nanoformulations similarity RBPE, indicating process. Average particle sizes approximately 109 nm 71 64 173 (EBG) obtained. AFM revealed that all formulations exhibited spherical forms heterogeneous distribution profile. Regarding TGA, presented similar thermal behaviors lower decomposition speeds than suggesting improved stability. Powder easily dispersed (8 mg/mL) intense color stability sedimentation for 48 h.
